A sealed pot doesn't concentrate its own sauce

This is the one point every single-recipe page on this query skips.

Why the sauce stays thin

An open braise evaporates and concentrates; a sealed one does not. That single difference is most of what separates a Dutch oven from a slow cooker.

A slow cooker's sealed, roughly 200-210F environment never lets the liquid reduce, so slow-cooker pot roast typically needs 2-3x the seasoning of a stovetop or oven braise, or a separate reduction step at the end.

An open Dutch oven loses steam the whole time it cooks, so the braising liquid slowly gets thicker and saltier on its own. A slow cooker's lid stays shut for the full eight hours, so whatever went in as thin liquid comes out as thin liquid, just hot and full of flavor pulled from the meat and vegetables. That's not a flaw in the recipe. It's the same seal that makes the method hands-off in the first place.

The other half of the trade

Dissolved collagen thickens the liquid on its own. A sauce that sets to a wobble when chilled had enough; one that stays watery did not.

Eight hours at a low, steady simmer is exactly the long, gentle window that gives dissolved collagen the most time to build body into the liquid before anything reduces it further. The sealed pot that keeps the sauce thin is the same pot giving the meat the longest, most even cook of the three methods we track.
