Body, fat and seasoning are three separate systems, decided by three different things you did in the pot. Of 75 recipes we hold, 35 reduce the braising liquid at least a little before serving it and 40 serve it as it comes out of the pot, the single biggest lever on body we hold.
Even our own model bundles all three into one outcome, “silkier and better seasoned” against “thinner, greasier or gluier”. That is exactly what makes generic gravy advice useless: it never says which of the three is actually broken.
Body is whether the sauce got boiled down, the one we have a real, graded comparison for. Fat is a separation problem, not a body one: a thick gravy can still be greasy and a thin one can still be lean. Seasoning fights body directly: reducing concentrates whatever salt is already in the liquid, so a sauce salted to taste before reducing is over-salted by the time it looks right.
An open braise evaporates and concentrates; a sealed one does not. That single difference is most of what separates a Dutch oven from a slow cooker.
Grouped by how far a recipe reduces the liquid, sauce body rises in the same order every time: lowest with none, higher with a partial reduction, highest with the 1 recipe that reduce hard. That last group is too small to trust as a number, but the direction matches the physics.
The trap: Reducing a braising liquid concentrates salt in lockstep with body, because salt doesn't evaporate -- never fully season a liquid you intend to reduce for gravy. Source. The one fitted lever that lands on gravy quality directly, not just body, is how many vegetables go through the liquid: more vegetables reads silkier and better-seasoned, across 148 bakes, puree adding starch on top of whatever gelatin the meat gave up.

A slow cooker's sealed, roughly 200-210F environment never lets the liquid reduce, so slow-cooker pot roast typically needs 2-3x the seasoning of a stovetop or oven braise, or a separate reduction step at the end. Source.

63 of the 75 recipes we hold call for no separate thickening step at all, relying on reduction, dissolved gelatin or a gravy packet instead; 12 add a measured amount of starch. Too few to fit a reliable lever to, so we cannot tell you how much cornstarch moves the needle, only what cooks say they did.
If the gravy or pan juices turn out thin, thicken them after cooking with a cornstarch or flour slurry (or a starchy puree/soup) rather than leaving them as-is. (32 cooks, 19 recipes.)
Too much liquid keeps gravy from thickening; use less. (5 agreed, 14 disagreed.) Add extra bouillon cubes and water to make more gravy. (4 agreed, 17 disagreed.) Starch after the fact is the fix most cooks actually back.
Richness has a word pair in how we describe outcomes, richer against leaner, and no recipe carries a score for it. Fat and thickener amount go untracked by any fitted lever too. We can tell you what cooks report doing, not how much either one moves gravy quality.
