Ask this online and the answers are a Quora thread, a TikTok, a Facebook comment and one magazine piece, never compared side by side. We resolved how every one of 117 recipes stabilizes its sauce, then checked which routes hold up, which reheat, and which one is doing its work through sheer cheese quantity, not technique.
Every recipe answers this one way or another, whether it says so or not. Here is what each choice is and how many of the 117 we hold take it.

Custard reads sharpest and richest by a wide margin, mostly arithmetic: custard recipes carry roughly 1.7x the cheese of a roux recipe by weight. Roux reads most stable and reheats worst; no-cook and evaporated milk trade places between them on both.

Two more cleared the same test but rest on the 3-recipe starch-slurry group: Starch slurry reads creamier than no-cook; and Evaporated milk reads gluier than starch slurry. Read those as descriptive, not a route recommendation.
Every other route pair, roux against evaporated milk on stability, say, is one this corpus does not have enough separation to call.
Casein, the cheese protein, clumps onto itself when pushed too hot too fast, squeezing out the fat and water it was holding. That's grainy sauce. A roux gets flour starch in the way; citrate works on the protein directly.
Cheese stretch comes from casein chains bridged by calcium. Citrate chelates that same calcium to stop clumping, which also disarms the bridge that gives melted cheese its pull. Roux never touches the calcium, so it keeps more native stretch.
Documented but not tested against our own reviews: citrate sauces reheat and resolidify more reliably than a roux or a no-cook sauce does.

The trade is reheating: of the four main routes, it reads worst for coming back after the fridge.
What to do: cook the flour into the butter for a minute before the milk goes in, so it loses its raw taste.

We only hold 3 citrate recipes, too few to trend. Outside documentation is more confident than we can be: citrate reheats and resolidifies well.
The trade: citrate disarms the same calcium bridges that give cheese its stretch, so it won't string the way a roux-based sauce can.
What to do: dissolve citrate in the milk before adding cheese, roughly 3 to 4% of the combined weight.

Cheese amount is a fitted lever for sharpness and richness here, not for how grainy or smooth the sauce reads. More cheese is both more flavor and more to break, and the data does not settle which one wins.
