Why is my mac and cheese sauce grainy?

Search this and every result says the same two things: pre-shredded cheese has anti-caking starch on it, and the sauce got too hot. Both are real, and neither comes with a number. We read how 117 recipes handle the cheese and the heat, and checked which parts of the standard advice our own corpus can back up. 63 of them never say how the cheese arrived, and that gap turns out to matter for what we can claim.

The actual mechanism

What grainy sauce physically is

Cheese emulsion stability

Casein, the main cheese protein, holds fat and water in an emulsion while it's cold. Push it too hot, too fast, and it clumps onto itself instead, squeezing that fat and water back out. That clumping is grainy sauce: a protein doing exactly what heat makes it do, not a mistake in the recipe.

Casein chain length

What holds the clumps apart is either starch, which gets in the way physically, or an emulsifying salt, which works on the protein directly. Citrate and the phosphates in processed cheese both chelate the calcium that bridges casein chains, so the protein can't bond into clumps the same way, and it can't stretch either: the same bridge does both jobs.

Documented, not tested against our own reviews: cheese sauce breaks past roughly 150F/66C, where continued heat drives casein to bond to itself until it collapses into clumps (source).

Not because the anti-caking mechanism documented at chowhound.com is wrong; 63 recipes give no signal either way, and the two that do weren't different enough on smoothness to call. 15 cooks in these reviews still say shredding your own gives a smoother sauce, 3 disagree.

The mechanism-first fix

Keep the heat low and take it off the burner to melt

Casein clumps past a real temperature threshold, not a vague one. Melting off direct heat, or on a slow cooker's lowest setting, keeps the sauce under that line.

What to do: pull the pan off the burner (slow cooker to low, not high) before the cheese goes in, and stir it through residual heat, not active heat.

What to do: buy a block, grate it yourself, toss it with a spoonful of the dry pasta before it hits the sauce.

Mix a slice or two of American cheese in with a natural blend, especially a sharp, drier cheddar prone to breaking on its own; its own emulsifying salts help hold the sauce together.

What to do: stir it in with the rest of the cheese, off direct heat, the same way you'd add the natural cheese.
