Do you have to chill gingerbread dough?

We could not measure a reliable difference. We split 41 recipes by how long they rest, a short chill under two hours or a long one of eight hours or more, and tested four outcomes against that split. None of the four cleared as more than noise. If your own recipe calls for a rest, follow it anyway: it was built as part of a balanced formula, not tested against this one.

That is the same honest answer this site already gave for chocolate chip cookies: we looked for a chilling effect and could not find one. What we can tell you instead, with real evidence behind it, is what actually does move a gingerbread cookie, and it is not the rest.

Four outcomes, tested against the same short/long split

We are not hiding that we looked. We split the recipes by rest and compared each group on four separate measures of the finished cookie. None of the four differences was large enough, relative to how much these recipes already vary, to call real once we corrected for testing four things at once.

"Not confirmed" is not the same as "disproved." An effect smaller than the spread across these 41 recipes would look exactly like this to us. We are reporting the limit of what we can see, not a proof that resting time does nothing.

Read this table and stop. The difference behind every row is smaller than this 41-recipe corpus can resolve, which is exactly why none of the four made it into the confirmed table above.

What does actually move this cookie

Not the rest. This is.

One lever on this dish cleared correction cleanly, and it has nothing to do with chilling.

Leavening amount changes spread. Recipes that carry more leavening (baking soda or powder, as a share of the formula) bake up measurably flatter and wider; recipes with less hold their shape more. Of everything this corpus tested, on any axis, this is the one result strong enough to trust without a caveat, measured across 16 recipes.

How the butter is handled moves edge texture. Recipes that cream the butter with the sugar (36 of 41 of these recipes) read differently at the edge than the small group that cuts cold butter into the dry ingredients instead. This one held up after correction.

Mixing order moves edge texture too. The standard creamed method (39 of 41 recipes) reads differently at the edge than the small reverse- creaming group. Also held up after correction.

Edge texture, in other words, does have a real, measurable cause in this corpus. It just is not the rest. It is how the butter goes in and how the dough gets mixed, decided before the dough ever sees the fridge.

If your recipe calls for a rest, keep it

A recipe is a system: its leavening, its butter handling and its rest were chosen together. We cannot prove the rest alone changes the outcome, but pulling one part out of a formula that was balanced with it is a different question from whether resting matters in the abstract.

If you're short on time, a short rest is not a shortcut

26 of these 41 recipes already call for under two hours, and we could not find a cost to stopping there instead of going overnight. That is different from skipping the rest entirely, which almost none of these recipes do.

If you want to change the cookie on purpose, skip the fridge

Leavening amount is the lever with real evidence behind it on this dish. Brown sugar share plays the same role for chew, measured across 285 reviews. Start there before you start timing the chill.

These are 41 different formulas from 19 different sites, sorted by how long each one rests, not a single dough chilled for different lengths of time and compared side by side. Anything the short and long groups differ on besides the rest could show up here too.

Four tests, one correction

Testing four outcomes against the same split raises the odds that one looks real by chance. We corrected for that, which is exactly why none of the four passed even though two of them looked real before the correction was applied.
